Bachelor’s Khichuri : Yummy and Easy

Yummy and Easy Bachelor’s Khichuri - ব্যাচেলরদের খিচুড়ি

A quick, hearty, and satisfying one-pot meal – perfect for solo cooking and lazy days.


Ingredients

  • Rice – 100 grams (about ½ cup)

  • Masoor dal (red lentils) – 100 grams (about ½ cup)

  • Egg – 1

  • Large potatoes – 1 to 2 (cut into cubes)

  • Finely chopped onion – ½ cup

  • Green chilies – 4 to 6 (sliced)

  • Ginger paste – ½ teaspoon

  • Garlic cloves – 5 to 6 (crushed or chopped)

  • Garam masala powder – ½ teaspoon

  • Turmeric powder – ¼ teaspoon

  • Salt – to taste

  • Oil – ½ cup

  • Water – as needed (typically around 3–4 cups)


Instructions

  1. Prepare the Egg Scramble:
    Heat oil in a pan. Add two spoonfuls of chopped onion and lightly stir. Reduce the heat and crack the egg into the pan. Stir continuously until the egg becomes soft and crumbly. Add a pinch of salt during this process.
    Once done, remove the pan from the heat and set the scrambled egg aside.

  2. Fry the Potatoes:
    In a deep pot, heat a little oil. Add the potato cubes and fry until they turn slightly golden on the edges.

  3. Add the Lentils:
    Once the potatoes are lightly browned, add the masoor dal. Stir for 1 minute to roast them together.

  4. Add Water and Spices:
    Pour in about 2 cups of water. Add the ginger paste, crushed garlic, turmeric, green chilies, garam masala, and the rest of the chopped onions. Cover the pot and let everything simmer on medium heat for 3 to 4 minutes.

  5. Add the Rice:
    Now add the washed rice. Stir gently to combine all ingredients.

  6. Adjust Salt and Water:
    Add salt to taste. You can taste the water at this stage to check the seasoning. Add more water if needed — the rice and dal should be fully submerged.

  7. Final Cooking:
    Cook on low to medium heat until the rice, lentils, and potatoes are fully cooked and have a soft, slightly mushy texture. Stir occasionally to avoid burning.

  8. Add the Scrambled Egg:
    Just before turning off the heat, add the scrambled egg mixture into the khichdi. Mix well to distribute the flavor evenly.

  9. Serve:
    Serve hot with a side of pickle, fried eggplant, or nothing at all. It’s a complete bachelor-style meal!
